Not too vegan friendly although we did find a place called Paisanos that had some yummy New Mexican food. Hiked at a beautiful place with red rocks, rolling hills and cactus, called "Dripping Springs" and went to "La Cueva" a cave that had inhabitants over 7,000 years ago.<br />

We passed one where we saw a bunch of zebra and wildebeast they were raising for people to come and shoot for fun (I looked on their website when I saw their ranch sign, and it literally made me sick). We really liked visiting Austin. It is a beautiful, sunny city with a lot of things to do. It has lakes, rivers, hiking and a huge vegan scene! And we loves us some vegan restaurants y'all!!<br />
It has 3 whole foods!! The one we went to has a Next Level Burger right in it. So yum!<br />
There was a lot of new growth and sometimes the websites couldn't keep up though...we went to several food trucks and even brick and mortar restaurants that had changed their location without showing it on their websites yet. One day we walked and drove around all morning and kept running into this problem, but it turned out ok because we got some free roasted potatoes and beets from a street vendor who was trying to promote his new food truck! All in all we found more than enough to eat though, and most of it was delicious!!<br />

Some of the things we did for fun:<br />
We stood on the Congress bridge at dusk and waited 2 hours to see the famous bats...in the summer there are up to 1.5 million bats that fly out from under the bridge and it is supposed to be really cool...but the night before we went they must have flown south! They had an estimated 43,000 the night before, and on our night...no flight! Still an adventure though, as the city was decked out for Christmas, and has such a beautiful skyline. </div>

We went to a really great animal sanctuary called the Austin Zoo and Animal Sanctuary. They said they call it the Austin zoo, because more people will visit and help to pay fo the animals that way, although it isn't really a zoo, all of the animals are rescues and they have a lot of room and great care it seemed. It was one of the best I have been to from what I could tell. Jossy loved feeding the deer and goats and llamas, and of course seeing the wolves, bears and big cats! A lot of their animals were rescued from other zoos, or from people who thought it would be easy to have a wild animal for a pet.<br />

This is not a zoom, we were right on the other side of the fence! He was so beautiful. They had a couple of males and we heard them roaring up a storm right before dinner time. I liked that they seemed to only have animals who could live comfortably in this climate. (I think). Not like Seaworld who uses their animals for entertainment and keeps Polar bears in 80 degree heat.</div>

After Austin, we drove to Galveston. I visited my lovely and sweet friend Janie. It was so great to catch up!!! She let us stay in her beautiful beach house rental just a couple of blocks from the beach. It was a blast from the past to be here. I had forgotten how uplifting and colorful the homes are with the charming architecture. We found some great vegan options here too at Eatcetera and Pho 20. </div>

They are huge! Here are some fun facts: the Saguaro is very slow growing: a ten year old cactus may only be less than 2 inches tall! An old cactus, up to 200 years old, can grow as tall as 60 feet, and when fully hydrated after the summer rains, can weight up to 4800 lbs!! I had no idea that the desert here was so pretty and had so much color and plants.<br />

We are glad that Jossy's teacher gave us her common core math workbook, because Jossy was able to do some math in the car. We are also trying out a new app online called "The Adapted Mind." I will take all of the help we can get for math, and this seems to be a fun break for Jossy from the workbook, with some good instruction if we need it.<br />

Death Valley was cool, a very relaxing drive with not too much traffic. My favorite part might just be my favorite part of our trip thus far: wild burros on the side of the road!!<br />

We saw four of these adorable little guys just outside of Beatty, NV. It really warms my heart to know there are still some wild creatures of the horse variety out there in the world. </div>

Next was Vegas. Just 2 nights and one full day here (which has been the way of this U.S. part of our trip so far, and it is proving to be way too hectic). Anyway, Vegas was really fun for our one day! It was sunny and lively with lots of music and things and people to look at on the strip! </div>

And it is a VEGAN PARADISE!!! I had no idea we would have so many options. We found a cheap room ($40!) at the Orleans and it was really nice (except the hot water was just luke). Our bellman told us all about the vegan scene and was so helpful! (Thanks Jeremiah!) We went to some super yum places: Go Vegan for chocolate maple pancakes and tofu scramble with green juice! They used a delicious vegan cheese called Violife that was amazing. Also, Violette's Vegan for teriyaki cauliflower bites, chips and queso and yummy chocolate cake. But our absolute favorite was Pancho's Vegan Tacos: we had a huge plate of nachos, quesadillas and carne asada street tacos, also a fresh canteloupe agua fresca which was crazy delish and came in handy because the salsa was hot hot!! It was all home-made and very delicious, and amazingly inexpensive for what you get!!</div>

Everything looked so dry dead, and a lot was burned. On the way to Fresno, we could see a terrible wildfire that ended up killing lots of people who were trapped in Paradise, CA. On a happier note, we then met up with Jamison's friend Bob, from his men's group, in Roseville. Bob said he grew up in Roseville when it was 10,000 people and it has grown to over 150,000.<br />
We visited Jamison's uncle Jason and his lovely wife Danielle, and their daughter Taylor. Such gracious hosts and their home is like pottery barn with an Italian flair, so beautiful and comfortable! Jason made us a hearty vegetable soup with garlic bread and olive oil, mmmmmmm!!!<br />

Last Monday, we arrived in Yosemite National Park. I have wanted to visit for years, and we finally got to spend an entire day in the park. Jossy's school was reading John Muir before she left, AND she just finished a book that was a mystery called "The Wolf Keeper," set in Yosemite, so she was excited to hike, yay!! Yosemite is a hiker's dream. Just spectacular!! The enormously huge granite cliffs go straight up from the valley floor and are so white next to the blue sky, it is simply breathtaking. I want to come back someday and spend at least a week.<br />

We hiked to the top of Vernal Falls, a lot of steps but Jossy was a trooper, and we actually ran into a really nice family of whom the Dad started the Powerbar company!...and he had a nine-year-old daughter! Woot! All made it easier to get Jossy up the trail! </div>

We found just a couple of vegan options to eat in the park. The first was at Degnan's where the cook told us he was vegan, and he made us delicious avacado toast with gomashio for breakfast! If you don't know what gomashio is, it is a seaweed and sesame seed salt seasoning that is yummy and very nutritious! We also found the Beyond Burger and fries in the lodge which was perfect after our 18,000 steps and 150 flights of stairs that showed on Jamison's fitbit after our hike! The best meal we had though was at a hostel called "Yosemite Bug," about 25 minutes outside of the park. Jossy had spaghetti and Jamison and I had a really nice tofu vegetable stirfry with orange sauce, washed down with my favorite draft... Sierra Nevada Pale Ale (in the Sierras!) of course! They also sold Justin's dark chocolate peanut butter cups, that we purchased and saved for our hike. They tasted so good when we reached top of the waterfall!!</div>

First stop: Beautiful Oregon! As we drove away last Friday in our rental car, Jamison suggested we all set an intention for our big trip. A yoga teacher years ago told me that the most important thing in life is kindness and I think this is true. So I decided to aspire to be kind more, and also to learn to "let go" more. Almost a week into our trip now and I'm finding this a challenge! It may be that you're never really "away" from your life, even on vacation, and I tend to be a worrier. And, I have the remnants of a cold that I think may have turned into a sinus infection so not feeling great. And...MATH anxiety! We want to make sure that Jossy keeps up with her math, so just making sure she is on track is stressful. I sure hope this is something that gets easier! Other than these minor annoyances, our trip is starting out wonderfully!!<br />
Our first stop was in Oregon, to visit our dear friends Tim and Dana, visit Alexa who was finishing part of her P.A. residency in Vancouver, and to go to some excellent restaurants in the vegan mecca of Portland!! We hiked on Mt. Tabor and just hung out and ate a LOT. The restaurants we went to this time: Blossoming Lotus, always a fave, so delicious! Sweet Hereafter, a warm new bar-restaurant with a delicious vegan mac and cheese for Jossy! Next Level Burger, so satisfying if in the mood for a burger and shake!! And for brunch, Off The Griddle (now merged with the A.N.D. cafe that was always a favorite for breakfast, especially the waffles and biscuits and gravy!). All were fun and delicious and of course Portland-y eclectic!<br />

Next, we picked up some yummy deli food from Whole Foods and drove to the coast to magical Manzanita! We rented a really cute little airbnb right down the street from our old home, and right in town. Hung out with some old friends there, and Jossy visited her old bff Maya! It was just like they picked up where they left off, and they had a ball drawing tattoos and playing computer games and tiddly winks. We went on a beautiful hike through the rainforest (and boy did it rain that day!) and to the beach. Our second day the sun came out and we enjoyed some surf and sand time on an almost empty beach.<br />

Our last stop in Oregon was Ashland. We stayed in a beautiful old hotel called the "Columbian Hotel", very European with its lots of steep stairs and even shared bathrooms! Since we are on a budget, we thought we would try this and it turned out great. I wouldn't want to do this for the whole trip, but our room was only $58 and very cute and comfortable! Jamison is keeping track of our spending in an app, and so far our food spending has been pretty high! We are trying to figure out ways to lower our eating out costs, so trying to share meals and definitely not wasting any food. We had some extra leftovers yesterday that we just couldn't eat, so we gave them to a homeless man with a dog. Ashland is so pretty right now with fall colors. It is a small town of only 20,000 people, but with a beautiful downtown, tons of hiking and some vegan options. A local told us they have a terrible summer smoke problem just like pretty much everywhere lately though. This first pic was a mural of Guanajuato, Mexico, which is interestingly one of the places we plan to visit in Mexico!!<br />

It is so delicious we ate it all before I could get a photo! This recipe is adapted from one that has coconut milk, but I was out of that, so I used coconut oil. I was in a hurry and didn't measure anything either, so I will work on that next time too! So here is the (approximate) recipe for delicious Turmeric ginger coconut rice!<br />

Ginger Coconut Rice<br />

2 cups brown rice*<br />
1/4 tsp ginger powder **<br />
1 teaspoon turmeric<br />
1 bay leaf<br />
2 Tablespoons unrefined coconut oil ***<br />
cashews, for garnish (optional)****<br />
fresh, chopped parsley, for garnish (optional)<br />

*soaked in fresh water for 2 hours if you want (I skipped it and it was still good, and also, you could use any kind of rice you have on hand)<br />
**I bet a tsp of fresh ginger minced would be even better!<br />
*** you could use refined, but it wouldn't give that yummy coconut flavor<br />
****macadamia nuts would be grand too!<br />

When I first found this recipe in Nana's book, (that is full of clippings, others' handwriting and recipe cards) I figured this was an old family recipe. But when I had trouble reading part of it and went online to see if I could find a similar recipe, I found it was a Martha Stewart recipe from 2003. Oh well, it will be easy to add recipe to the blog, just cut and paste! Haha! Plus, I know it's a good one, if it's in this book! Only her very favorites from 90 years of cooking! OK, maybe she wasn't cooking yet at age 1...80 years I bet!</div>

<li style="list-style-type: square; margin: 0px 0px 0px 30px; padding: 0px;"><strong>2 large eggs (I used flax eggs- 2 TB ground flax mixed with 6 TB water; next time I may try egg replacer, as the cookies were slightly crumbly)</strong></li>

<strong>Making the Crinkle Cookie Dough</strong></div>

<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">In a medium size bowl whisk together the flour, cocoa, baking powder, and salt until well blended. (If your cocoa powder is lumpy you sift it through strainer into the bowl before whisking together the other ingredients.)</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">In a large bowl, beat the butter and brown sugar with an electric mixer on medium high speed until light and fluffy, 3 to 4 minutes.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Add the eggs and vanilla, and beat until well combined. If necessary, scrape down the sides of the bowl with a rubber spatula to make sure all the ingredients are well blended.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Add the melted chocolate and beat until blended.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">With mixer on low speed, alternate adding flour mixture and milk until just combined.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Divide the dough into quarters, wrapping each with plastic wrap, and chill in the refrigerator until firm, about 2 hours.</li>

<strong>Baking the Crinkle Cookies</strong></div>

<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Remove portions of cookie dough from the refrigerator one at a time.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Divide the portion of dough into 16 1-inch balls.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Place each of the sugars in a shallow dish.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Roll each ball in granulated sugar and then in confectioners' sugar to coat completely.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Place the cookies 2 inches apart on prepared baking sheets.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Bake, one cookie sheet at a time, until the cookies flatten and the tops form cracks, about 12 to 15 minutes.</li>
<li style="list-style-type: decimal; margin: 0px 0px 0px 35px; padding: 0px;">Remove from the oven and place the baking sheets on wire racks to cool. Store in an airtight container, between layers of parchment or wax paper for up to 1 week. </li>

When you try and run away, your head is jerked around by a rope around your face, or a bar of metal in your mouth, or a noose around your neck. There may be much shouting all around, and the more you try and get away, the more often the ordeal is repeated...Or, imagine this: you are a little toddler, still young enough to want to drink your mama's milk. You are taken from her and one day you are suddenly being chased by a huge horse. You run, and are suddenly jerked off your feet by a noose around your neck. Just as soon as you get to your feet, you are thrown down to the ground again, and your legs tied. This happens day after day, again and again sometimes. Sound like a horror show? It's called RODEO. I can't believe I used to take part in this horribly cruel shit.<br />

Whip up some delicious vegan pancakes or pie and serve it at the local country diner with hot coffee...in your sexy jeans and a tight t-shirt... I don't know! I did an impromptu lentil soup with veggies I had on hand, plus tomatoes, thyme and a zucchini from our garden. But next time I will make Mom's Lentil Soup, it's delicious. Here's the recipe for her soup, and also a photo and recipe of a chili I made on our last cool day before summer! (Obviously it's been a whirlwind summer!)<br />

2 TB chili powder (or more)<br />
3 c Vegetable broth - low sodium<br />
4 oz tomato paste (3/4 of can, use the rest for english muffin or tortilla pizzas!)<br />
1 can tomatoes in Adobe sauce<br />
1 large tomato, chopped<br />
2 small jalapenos, sliced in thin in rings (you can add jals later too if you want chili mild)<br />

Saute onion in oil until translucent. Add carrots and saute 2 more minutes. Add cumin and chili powder, then broth, beans, tomato paste, Adobe tomatoes, chopped tomato and jalapenos. Bring to boil, then simmer for at least 2 hours on low.<br />

</tbody></table>We had so much fun in Hawaii this last Spring. Jamison was lucky to get a job assignment in Oahu, and so Jossy and I were able to tag along for a great vacation! We started out in Honolulu, where we found some amazing vegan eats! It was really easy and fun to eat here, because there were lots of vegan/vegetarian choices at most places and some all vegan cafes too. We loved the <b>Peace Cafe</b>. They had amazing food, drinks and desserts! We also loved the <b>Down to Earth All Vegetarian Organic and Natural Store</b>! This place was awesome with a deli and even garage parking. A place called Longhi's in the Ala Moana mall had the best fruit bowl I have ever had! Fresh pineapple of course, with all fresh blueberries, strawberries, bananas, cantaloupe, blackberries and more and HUGE! They didn't have vegan options on the menu but were great at working with us with things like fried potates, avocados, pastas and sauces, veggies and breads. (A lot of places are if you just ask the waiter to ask the cooks/chef what they can do for a non-meat and non-dairy eater! Plus, I think it helps when we tell them our daughter has a dairy allergy, then they usually help us out a lot and find someone in the kitchen that knows how to prepare dairy free food.<br />

Another great little place was called <b>Ruffage</b>. The owner was really nice and they had a little health food store too, where I bought a big tub of coconut oil to try as sunscreen. It worked great! I even used it on my 2 year old, even on our faces! We didn't burn at all, just tanned and were super moisturized. :) It was a little greasy, but who cares when you are on the beach and bumming around anyway! It felt so natural and I was just so surprised that none of us whiteys burned at all!<br />
<br />
We stayed at the Ilikai, where we got upgraded to a 2 bedroom suite! Right on!! Although this place did not have a great pool, the place next door did, and when we went there thinking it was the Ilikai's pool...they let us stay and it was awesome. Can't remember the name of the hotel, but it looked fun. And on the other side of the Ilikai was the Hilton Hawaiian village, which was fun to explore with their flamingos and swans and Koi ponds, even if it was pretty fake. The beach was OK, but lots of people and very "groomed", but nice because the waves were small so we didn't have to worry about our daughter wading.<br />

The second part of our trip started out...exciting shall we say?? Our first night on the North Shore we were evacuated for a Tsunami warning! We woke up at 1:00 AM to firemen shouting "EVACUATE IMMEDIATELY" in a megaphone, looked outside and ours was the only car left in the parking lot! We had gone to bed early and with the ocean noise, hadn't heard all of the commotion of people fleeing for higher ground! We grabbed our daughter and the diapers and took off. We asked the locals at the gas station where to go, and ended up sleeping in the car in a McDonald's parking lot in a town at about 900 feet above sea level. We were let back in to Haleiwa around noon the next day. There were 6 foot higher than normal waves that damaged a few boats in the harbor, but that's all thankfully. The condo where we stayed has a reef in front and the next day, the water would fully expose the reef about every hour or so, which I guess was unusual. Other than that, it was vacation as planned. :) We played in the sand, swam (only a little :) ) snorkeled, and watched the amazing huge waves. We hiked to a waterfall at Waimea Valley and swam, and it was beautiful! The Polynesian Cultural Center had a good show and a great Luau. There's a wonderful vegan/vegetarian restaurant in Haleiwa called <b>Paradise Found</b>. It is in the back of the health food store. Jossy loved the Acai smoothie and we played dominoes while we waited for our delicious grub.<br />
<br />
I can't wait until I can go to Hawaii again. The fresh air, the ocean beaches, the laid-back friendly people, and smell of flowers.
