I share my life with an amazingly strong, kind man and a beautiful, compassionate and hilarious daughter. maple pecan spinach salad by Abby

One bunch spinach
2/3 c Pecans
1/4 thinly sliced red onion

Coat nuts with:
2 T EVOO
2 T maple syrup
1/4 tsp cinnamon
pinch cayenne
pinch seasalt
...then bake at 300 on sheet with parchment paper for 15 minutes

Dressing: mix together whisking oil in slowly last:
2 T balsamic vinegar
3 to 4 T EVOO
3/4 tsp dijon mustard
1/4 tsp fresh pepper
1 tsp maple syrup
